Wine dinner: Portugal

Boutique table wines under the Portugese labels Broadbent and Ferreira will accompany a menu by Hilton executive chef John Reis on Friday night at The Golden Sheaf, with Broadbent Selections regional manager Rebecca Foulk hosting.

Reis was ACF Chef of the Year in 2003, and received the Super Chef award that year at Farmers Market 2003. Born and raised in Portugal, Reis came to the U.S. when he was 12. At 15, he was working as a cook’s helper in Hartford, Ct. He became Executive and Corporate Chef for the Hilton chain, and opened the Harrisburg Hilton and Towers in 1990.

The menu:

Reception 6:30pm
Cod fish cakes
Grilled sardines with olive oil and marinated onions
Cockles in a Garlic and white wine sauce
Assorted cured and dried meats
Assorted olives
Ferreira white Port Tonics

Dinner 7:30pm
Camarao com Piri-Piri
(Grilled shrimp with a spicy Paprika sauce)
Broadbent Vinho Verde

Frango com Feijao a Portuguesa
(Grilled Guinea Hen on a Bean and Sausage Cassoulet)
Ferreira Esteva

Bife a Portuguesa
(Tenderloin of Beef topped with Thin Prosciutto with a Shallot Red wine sauce)
And Sauteed Potatoes
Casa Ferreirinha 2003 Quinta da Leda

Assorted Spanish and Portuguese Cheeses
2003 Quinta do Crasto Douro Reserve Red Old Vines

Pasteis de Nata
(Cream custard Tarts)
Ferreira 20 Year Tawny, Duque De Braganca
